Looking for a fabulous white cake recipe
I am in need of a fabulous consistent recipe for a white cake for weddings. I cannot come up with a moist, dense white cake for stacking. I seem to be getting several requests for white wedding cakes especially stacked designs.
I keep coming up with dry or way too fluffy a recipe to be able to use.

Re: Looking for a fabulous white cake recipe
Make sure that white mean white cake. I had a client ask for one once and as we talked I realized want she meant was that she didn't want the cake to be chocolate. She didn't know the difference between sponge, yelloe, or white cake. Most people don't know that white cake usually contains no egg yolks. I made a sample of two yellow cakes one which was yellower than the other and she still thought I made white cake.
But if your client knows what she is talking about, try sprinkling a sugar syrup on your white cake and just make your filling and/or frosting less sweet. White cake might be moist to the fact that it uses only egg whites(might be why the texture isn't as dense either) so this might help moisten it up. So if you have a great tasting recipe, a syrup may be all you need!

Re: Looking for a fabulous white cake recipe
She specifically stated she wanted a white cake, no eggs yolks at all.
I thought that was kinda odd way to put it but evidently she had tried another baker and she ended up tasting a vanilla yellow cake which was not what she had wanted.
So wants a vanilla white cake.
She prefers the texture with her vanilla cake of a white cake.
Almost sounded bridzilla-ish but it may be that she knows just what she wants and wants to be sure I do too.

You stole my recipe!!!!!
Seriously, you're exactly right. Make it straight like the box says to and it's the best you're going to get for a white cake.
I detest homemade white cake and I've tried a ton of them. I think the wasc on cc is too heavy and almost any other recipe I've ever tried has a nasty after taste to it...not sure why homemade does that, but it does. I've tried adding pudding and honestly all I can see that it does is add to the price of the cake.
Just use the mix. It's quick, it's cheap and customers think it's wonderful.

Re: Looking for a fabulous white cake recipe
No problem! .gif)
All my standard cakes (white, yellow, chocolate) are mixes. They are easy-peasy to make (especially if you are making a million of them for a wedding) and they are easy on the wallet....oh and idiot proof. Which I need.
