cheesecakes for wedding cakes?
I had someone ask me if I would do cheesecakes for her 4 tier wedding cake. She said other people she had spoken with didn't do those and it is what her and future hubby want. So has anyone here ever done this or seen it? I have heard of people doing it and decorating them like regular cakes even! So I told her we could try it I had never done it so it would be a first. She said that was better than a big no. So I am going to research cheese cake recipes to see what I come up with.
Now family will have to be taste testers for this one! .gif)

Re: cheesecakes for wedding cakes?
Maybe a cheesecake with a cake layer? Like Juniors in Brooklyn does?
Sounds VERY different. Good luck!

Re: cheesecakes for wedding cakes?
Rose Levy Beranbaum has a recipe and instructions for wedding cheesecake in her Cake Bible. She frosts each one layer tier with a white chocolate frosting and tops with an apricot swirl. As far as assembling it, she puts each cheesecake layer on a glassine (?) covered cardboard and uses her famous drinking straw system for supports. I can't see why this wouldn't work, although a 4 tier cake would probably monstrously heavy to deliver! If you have the Cake Bible, it's on page 217.

They have a website. I got the Grandparents on each coast one for Christmas from the boys. My parents got the Strawberry Shortcake and Jeff's parents got the Reeses peanut butter. If you cant do homemade, its the next best thing! .gif)
