Help!!!!need A Good Bavarian Cream Recipe!!!!!
I had a really nice woman come today for a wedding cake tasting.
She walks in looks at my house and my 2 little ones peeking around the corner and says"May I see your portfolio please." UM WELL O.K.
So she looks through all my cakes and takes her sweeeeeeet time I tell ya.
But o.k. again.
Then she says I'd like to taste those flavors we discussed. Now if I may. Kinda just rubbed me all wrong, ya know?
But I shooed off the little ones and brought in her tray of tastings:
cup cakes being of several different flavors.
1.Triple chocolate cake with IMBC
2.Red Velvet with IMBC
3. Butter pound cake with bavarian filling and dark chocolate ganache covered
4.pumpkin spice with cream cheese butter cream
5.banana cake with milk chocolate butter cream
6.Rum butter cake with caramel icing
Now I usually on e do 2 flavors and no filling on tastings. She looked at menu of flavors and requested these combos and paid the 20.50 for 2 of each flavor to make a dozen and .50 additional for each filled cup cake.
This is the only way I can afford to make this amount of batters and icings and fillings and keep them around for these tastings who want several different options.
You'd think with the price they'd reconsider but I have these kind of tastings 2 to 1!
So she eats 1 of everything and I mean 1 of every flavor! Right there and then. The WHOLE CUP CAKES!!!
Then declares she wants the wedding cake or Bride's cake to be 4 layers 10, 12, 14, 16.
layer 1 -red velvet cream-cheese
layer2- pumpkin and cream cheese
layer 3- triple chocolate and cream cheese
layer 4- butter pound cake with cream cheese
Then she says she wants the groom's cake to be butter cake with bavarian filling and covered in chocolate ganache.
But I DO NOT WANT THAT VILE FILLING YOU CALLED BAVARIAN CREAM! I WANT A REAL RECIPE.
So I asked if she like to figure up serving sizes for the cake to make sure she had what she needed, well no.
I want a cake with those dimensions on layers exactly.
I want it just as I have described.
We picked out designs and off she went.
AFTER PAYING IN FULL FOR THOSE CAKES!!!
So now I HAVE TO HAVE a good recipe for this filling...all I had was the sleeve kind and she deff did not like that!
This is my largest order yet and has potential to bring in many a good side orders and a lot of free advertisement for me.
This lady is the sister of our Governor and will have an all out reception and wedding list!
Now I am nervous!!
I am not even sure what a "real" bavarian cream should taste like, look like or anything!

Are there supposed to be pictures in your post.. If so, I couldn't see them, all I could see was Cake Central... Congrats onyour large order..but, she seems very rude... It could be big for you like you stated but.. with her attitude it could go either way... You should do a search for bavarian cream and see where that gets you... I've personally never made it but love the loranne flavor... Great luck, she must have really enjoyed your samples to gobble them down they way that you explained...

No no pics were supposed to be there.
I hope she enjoyed them...although as quick as she inhaled them I have no idea how she could even taste them!
But what ever! I am googling the bavarian cream but am coming up with all kinds of stuff! 
So on I go to hopefully find a good recipe to try out before this event in late april.

I don't care who she is, you don't deserve to be treated that way! I understand that she may be an important contact, but sheesh!!  You can't treat people that way and then expect them to bend over backward to please you.
She is putting excess demands on your time and pantry. You have to find the recipe, shop for the ingredients and test it out at least once before you serve it to her. If she is that important that you don't want to lose her business, then I would be as sweet as pie, smile and do what she asks, and then I would just keep track of every extra minute you spend searching, every extra ingredient you have to buy and charge her accordingly for her "special request". Your time and talent is worth being paid for. .gif) It's obviously something she can't do herself, so take pride and don't let her walk all over you...just let her think she is!

Thanks for the confidence boost! I intend to use 1 of the 2 recipes I found. 1 was on food network for European desserts and the other was a recipe someone on CC gave me.
But I think the European one has more a taste and consistency more to her liking...bein so high-flatulent and all!
But I will also look on allrecipes.com and epicurious.com is another tried and true source for good recipes too!

I know wedding cakes are the money maker in this business, but boy do I hate dealing with the customers that come with them!
This one sounds like a handful! I'm not sure I could've handled her as well as you did. I don't mind it when someone just doesn't care for something I make, but there's no need to be rude about it and she definitely was!
The cakes sound like quite a challenge! So many flavors and fillings that have to be kept chilled! I'm sure you'll pull it off though. Good luck, it does sound like this could be a great opportunity for you!

I am hoping it works out! I tried the recipes and came up with an appropriate one so I'll test it out this weekend on family!
The Lady already emailed me and made sure I found a recipe for her bavarian cream and was pleased I did and even wrote in her email:
" I have every confidence in your ability and your cake skills as I have had your cakes several times and I like your decorating approaches. Thank you and I look forward to spot lighting this wonderful cake at our event."
WOW! That gave me a big confidence boost, plus she said she'd had my cakes several times before....I wonder which ones? And where?
But the best part was she had confidence in my ability!!!!! Well I'll take that! LOL!!!
Now I am a little less nervous and more all at the same time!

You know she just may be one of those types who just says exactly what she thinks without meaning to be rude. Hey, at least you know when she likes something and when she doesn't! If she's seen and tasted your work, then obviously she's pleased with it and knows what she's getting.
