Thanks for the post. Seeing it may help although I want to see Maite do an icing video & there is someone else here that does it really smooth. I must have a heavy hand and lousy icing. One of these days I'm going to try Sugar Shack's.
Just curious, how long does it usually take to ice a cake. I've spent an hour on some and can't get them smooth.

I know what you mean! You have to find a buttercream that works for you and a good smoothing techique. I haven't used Sugarshack's icing recipe yet. I use Toba Garrets buttercream. It crusts nicely and is easy to work with. I start out like the video, using the icing tip, then smooth with an offset spatula, but then let it crust then use the Melvira method (sponge roller), and it gets super smooth! An 10" round would take about 20 -25 minutes including crusting time.

I don't think I would have the patience to clean the darn roller. Does that take an hour?

lol! Actually, since the icing has crusted, it hardly gets cruddy at all!!

Ok, I'm going to the paint store. Funny thing, my husband is always telling me how to ice a cake since he used to be a painter & did plenty of spackling but do you think he would help me??? NO!!!!! My brother is always helpful if he stops by.

I still like Sharon Zambito's Perfecting the Art of Buttercream. She goes step by step. Even though I have been at this for awhile, I was able to pick up a few tips from her. If you don't have this DVD or the Flawless Fondant DVD... they are worth the investment. Better than a class because you always have it for reference!

Yes! I just received my order from ITO of Flawless fondant and stacking. I already have the buttercream one, but haven't finished watching it yet  But from what I've watched already, it is the best I've seen so far. I guess it's time for a Sugarshack vid marathon!! LOL!!

It seams like there is a variety of ways to get an smooth cake, but this particular one must no be for a person that has a lot of cakes to do... it's to slow in my opinion.
But if it works for you, then... that is grate!
