I like this video because if I could have seen this a long time ago many cakes, tears and icing disasters could have been avoided for me!

The video is good. If it helps you, then is good.

I think frosting a cake it gets easier with time; there is no secrets, except that a cake is much more easy to frost if it is a bit "solid". So, never frost a cake as soon as it comes out of the oven...

If I'm baking at home, I will take the cake out from the oven, let cool for some minutes, and take it out of the pan; then, set on a board, wrap in plastic, an set in the freezer until I'm ready to decorate. The heat inside the cake is going to be transform into moistness when defrosting.

When I'm ready to decorate, I star working with the cake while it's still frozen (You can cut the cake easier, without making to many crumbs). Then fill the layers, and crumb-coat quickly, and pop in the freezer for a few minutes. Then it's ready for you to frost well.

The only thing I do differently than that is frost and crumb coat after it is thawed.
Will have to do it frozen next time.

I also do mine either really cold or still partially frozen. I love sharon's buttercream DVD

I'll never have room in my freezer & occasionally, I can squeeze one in my fridge to chill. Maite, can't you get someone to videotape you icing a cake???? Or am I going to have to come out there next winter when it's 10 degrees here & video tape it myself. hmmm, that sounds good but I can't wait that long!
