cheesecake fudge
cheesecake fudge
1/4 Cup Of butter
2.5 Cups of sugar
1 5 oz can of evaporated milk or 2/3 of a cup
3 cups of mini marshmallows
2 (3) oz packs of cream cheese, cubed and soft
12 oz premium white choc chips.
2 tsp vanilla extract
Line a 9x9 inch baking dish with lightly buttered waxed paper, or aluminum foil. Set aside.
Mix butter, sugar, evap milk, and marshmallows in a heavy 3qt saucepan. Bring to a full rolling boil on medium heat, stirring constantly. Continue boiling 5 and a half minutes on medium heat, or until candy thermometer reads 234 degrees, Stirring constantly to prevent scorching. Remove from heat.
Stir in cream cheese, and white chocolate chips until melted. Add vanilla and mix well. Pour into prepared pan.
Cool at room temp. Cut into squares. Makes about 2dzn depending on size.

Wonder if they have pumpkin extract? Recipe sounds great and I will be trying it. I like making different types of fudge.

my husband is the fudge maker in this family...i'll have to have him try these out! he takes pride in knowing how to make SOMETHING in the kitchen! But he more than makes up for all that with the handy work around the house! he rocks! i love him! .gif)
