A friend gave me this recipe years ago and this is the only fudge recipe that works for me.
I made tons of this at Christmas time and put in tins and give away to family and friends.

In heavy, deep pan

1 stick of butter or blue bonnet margarine
4 1/2 cups of sugar
1 can of evaporated milk

Bring to rolling boil, stirring constantly. Once it comes to rolling boil stop stirring and boil for five minutes.

Put 4 1/2 cups of semi-sweet chocolate chips and two cups of packed mini marshmallows in the bowl of a standing mixer. Pour boiling mixture into mixing bowl and mix with paddle attachment until fudge starts to get hard. Pour into butters tins. Top with nuts.

This sounds really similar to my mom's fudge recipe, except she won't mix it in the mixer - it MUST be beaten by hand. Talk about tired hands!

It is a good recipe - I've been eating it now for longer than I care to admit... :-)

Definitely gonna try this! I've been looking for a *tried & true* fudge recipe that uses the mixer instead of the dredded wooden spoon! lol! Thanks for posting!!

If you can find the Raspberry chocolate chips they are great in this recipe. Actually you could use butterscotch, or peanut butter chips. I wouldn't use the white chocolate chips.

I bought lots of the peppermint andes chips last year at christmas time and love them in almond bark or on pretzel rods. I have not tried the cream de-mint ones.
