Default Yogurt Walnut Fudge

3 cups sugar
1 tsp light corn syrup
2 cups plain yogurt
6 tbsp butter
3 ounces white confectionery coating chopped or 3 ounces wafers
1 cup walnut pieces crisped
1/2 tsp vanilla

Before you begin, line an 8 inch square pan with foil and lightly butter the foil.

Chop the confectionery coating.

Combine sugar, syrup and yogurt in a four-quart heavy saucepan. This candy foams up as it heats). Place over medium heat and stir constantly with a wooden spoon until all sugar crystals are dissolved. Wash down sides of pan with a pastry brush. dipped in hot water, then clip on thermometer . Stir very frequently as mixture continues to cook, and wash down sides of pan twice more during cooking process.

Continue cooking until thermometer registers 236 degrees about 35 minutes. Remove from heat and lay butter, cut in thin slices, on surface. Do not stir. Allow to stand undisturbed for 10 minutes. Now add chopped coating and stir vigorously until coating is melted and mixture is smooth. Stir in nuts and vanilla and pour into prepared pan. Refrigerate until firm, about an hour. Cut into squares. 64 pieces. Can be kept in Refrigerate for one month.
