I wish I had taken pics of the ones I did last week for work. It was my first time (soo time consuming!) doing them and I did use candy melts - they came out beautifully.
But you shouldn't pour them. What I did was bake my sheet cakes, chocolate and orange. Cut out small squares, circles and triangles because I had a candy/chocolate mold that had squares, circles and triangles.
I bought two so I could do 12 at a time and cut out each individual mold. I poured some of the melted candy into a cavity, shook it around until it covered all sides of the cavity, and then poured out the excess. (you're making the "shell") After I did each one, I placed it in the frig for a few minutes to let them harden. Then took them out of the frig, piped a small bit of icing in the bottom of each and then placed the cake inside. Then I covered the cake with a bit more of chocolate to sort of close it up. I tried to not let a whole lot of excess flow over. (you can push the cake down a bit and put in just enough chocolate to cover the bottom of the cake) Then put them in the freezer for about 5 minutes.
They pop out of the molds so easily! I piped a small shell or other random things on the tops and these people went NUTS over them. It took me 3 hours to make about 4 dozen. (I baked the cakes the day before and froze....easier to cut when frozen. I used cutters.)
I hope that makes sense!
