Default Mom, what's for dinner?

That same old question! I thought we could start a thread to give us ideas, when our mind isn't into it...

Tonight, we were alon dh and I for dinner... my boys are away for 3 days with my parents, and my dd was eating at her friend's house. So I made mashed potatoes, with Santa Fe marinated pork chops and a salad. It was my first time eating those pork chops. I've bought them already marinated and they were 50% off.... They were really yummy, and I made a little sauce just with left over juice of the pork chops in my fry-pan and some evaporated milk (2%), and it was delish!!!!

So what did you make for dinner?

We had pork chops too! I made "Caramel Apple Pork Chops" from allrecipes.com I served it with sweet peas and some stuffing that's been in my cupboard since Thanksgiving Hey, it's boxed....I think I still had 2 more years until the expiration date!
Tomorrow is Burgers and Brats on the grill with potato salad and beans.

We just had steak on the grill and corn on the cob...followed up by some smores...mmmmmmm!!!

Though last night, we improvised. We made Italian eggrolls. We had eggroll wrappers, but nothing that would normally go in them. We had stuff to make calzones minus the dough. So, we put the calzone fillings into eggroll wrappers. (My twins made an assembly line and had them done in no time!) We fried them quick and sprinkled them w/ parmesan while they were still hot. I was a little scared about them, but they turned out to be quite good!

Have not started cooking yet... West Coast we're always a bit behind the rest of the world!!! I hate summer cooking... it's too hot to cook! It usually ends up something on the BBQ and a salad! Looks like it will be a steak tonight. Hubby got burgers last night ... I hate burgers!

I have some regular pork chops, I went on allrecipes.com and got that "Caramel apple pork chops" recipe and that's what we're having tomorrow for dinner! Sounds really yummy!

We cut up chicken breast & sauteed that in garlic. Made Goya rice & black beans. Aspargus and tossed that into the rice & beans with the chicken too. It was pretty good.

Bought some sausage for tomorrow. Not sure what I'm doing with it. I just realized I forgot to get broccoli rabe. Usually slice up the sausage & cook it up with the broccoli rabe and Rotel tomatos with chili peppers. I like mixing things altogether. Usually less pots to wash but not tonight.

Kept it simple tonight: BLT's! I love those sandwiches, and they're so fast and simple!!
Tomorrow night I think we are planning to do Pad Thai or maybe Delmonico steaks on the grill (depending on how things are thawing in the fridge!! haha)

I love grilling outside in the summer--or rather, watching my husband grill while the kids run around and play.

Oh, I LOVE BLTs! I haven't had one in ages! I'm gonna put that on next week's menu!
Speaking of...do you guys have a system for dinners? Like a meal list to choose from every night, or do you plan every night weeks in advance, or do you wing it every night? I've tried all those, but I'm always looking for a better way.

We wing it each night, but I hate it that way. I used to plan the week's menu, but that didn't work either since what I had planned wouldn't sound good either to me of the bf and I'd end up with spoiled meat and such...
