This week I had made some banana bread muffin, they were so good... And now there was not even one left, so needed to bake some more muffins... and this week I had some mango-pineapple juice, and my juicer keeps the pulp that's not used for the juice. I had it in the fridge to use it in recipes... so I decided to try the same banana bread muffin recipe and substitute the bananas for the mango-pineapple pulp.
Well. the result was better than expected!!!! Sooooooo yummy and tender!!!! They even raised a little higher than the original recipe!
