Default SugarShack's Buttercream Icing

I can't think of a better way to start a new forum on icing than to list what I think is the best recipe ever created!

The video (measurements are for a 5qt KA):


General Instructions: (Taken from her post on CC)

5 generous cups Sweetex shortening, or other brand of hi ratio ( or regular shortening)

5 pounds powdered sugar

4 TBS Wedding Bouquet flavoring (or substitute your flavoring of choice in the appropriate amount)

11-12 TBS hot coffee creamer liquid (as discussed in video)

Cream the shortening , flavorings, and hot liquid with paddle attachment until well combined and creamy. Then stream in first 3 pounds of powdered sugar with mixer running at speed one. When incorporated somewhat, stop and scrape down sides of bowl well.

Stream in last 2 pounds of powdered sugar at speed one. When incorporated, turn the mixer up to speed 6 and let it beat for 5-7 minutes until very smooth. Scrape down the sides of the bowl very frequently while the mixer is going at speed 6.

The goal is to get all of the icing down into the belly of the bowl and fill the bowl from side to side with no air gaps around the walls, as well as covering the paddle up to the springs.

If the icing is making a sucking or "kissing" noise after all the sugar is in, add just a few drops more of liquid, while scraping down the sides,with the mixer running, until that stops. You should create a bowl full of icing side to side, where the paddle is completely submerged and beating in a vacuum under the icing.

5-7 minutes at speed 6 and you should have a smooth as silk and nearly airless icing.


Recipe for 6 QT:

3 lbs sweetex (use a kitchen scale)

6.5 lbs powdered sugar (use a 4 cup measuring cup, 4 cups=1 lb)

9 tbsp wedding bouquet

11 tbsp hot coffee mate liquid

Thank you for posting both recipes!!

I'm a little puzzled by something, though...it seems that the ratio of shortening:sugar:Wedding Bouquet:coffee creamer is really skewed out of proportion for the 6 qt batch. The amount of powdered sugar goes up by only 1.5 pounds yet the amount of Wedding Bouquet has more than doubled. I wonder what's up with that?

I wish my brain wasn't so fuzzy right now or I would do the math. LOL I need more coffee to clear out the cobwebs!

Hmmm..You're right about the measurements on the flavorings. I'm not sure what that's about. I know that when I figured my own amounts for the 6qt I only added 4T of vanilla because I don't use the wedding bouquet and I thought the taste was just fine with that amount.

But as to why the difference in quantity, I have no idea.

Now that we have separate forums for recipes, it ought to cut down on having to hunt through general threads to find a recipe. There are so many recipes already posted though, I'll ask Mtbaker if he'd like for us to start moving recipe posts to their appropriate categories or if he'd just prefer we repost.

Now that we have separate forums for recipes, it ought to cut down on having to hunt through general threads to find a recipe. There are so many recipes already posted though, I'll ask Mtbaker if he'd like for us to start moving recipe posts to their appropriate categories or if he'd just prefer we repost.
I was thinking the same thing on moving them and or at least directing others they can post them in the appropriate section to cut dual postings.

As I run onto older recipes that have been posted, I can move them. It'll just take some getting used to posting to more specific categories. In the end though, it's going to be so much easier to find what you're looking for!

I've tried making this a few times, but still can't seem to prevent the air bubbles.

Does anyone know the quantities for a 4.5QT mixer?

It doesn't make sense that the Coffee Mate did not increase for the 6 qt recipe.....
