Default fudgey butter cream

I made the best fudgey chocolate butter cream last night! To die for!

1 1/3 cup high ratio shortening
5 oz of dark chocolate and milk chocolate split...so 2.5 oz of each melted.
Heavy cream added by the tablespoonful to get desired thickness
2 tablespoons meringue powder
2 tablespoons vanilla bean paste
2 pounds powdered sugar sifted.

cream shortening and vanilla till smooth. Add meringue powder and mix till combined. add 2 tablespoons heavy cream and mix again for 15 sec.
Add powdered sugar and add heavy cream by the tablespoonful till smooth and then add cooled melted chocolate and mix thoroughly. Add more heavy cream if needed.

This icing can be left out on a cake and I have never had any problems with it.
This does crust and has a fudgey chocolate taste. You could use any type chocolate to make this...so play with it and make it your own.

I just made a birthday cake for a 17 year old and he requested a triple chocolate cake filled with chocolate butter cream and real whole cherries. Then covered in choco. butter cream and covered in dark chocolate fondant with green candied cherries as borders and a pile of them as a topper!
Talk about chocolate od!!!!!!!

That recipe sounds so good but I have no vanilla bean paste. I wonder how much vanilla to use? 2 tsp?

I would use 1 tablespoon of real vanilla extract.

Thanks, I am so going to try this in the next couple of days. Maybe my DS will try some cake, all he wants me to bake is choc chip cookies and brownies . No fun to decorate.

Yeah, I know what you mean...hubby would be fine if I just made brownies and peanutbutter choco-chip cookies all the time too.

Do you think this would be good on a cookie cake for piping? I am trying to make one of those Nestle Toll House Cookie Cakes like you find at those mall cafes. Any advise would be greatly appreciated...
