I wouldn't make it this far ahead unless you wanna freeze it till you need it or put it in fridge for awhile too. I usually keep in fridge 2 weeks up to a year in freezer in a freezer bag all air squeezed out then put into another freezer bag and sealed tight.

2 tablespoons meringue powder
2 tablespoons vanilla bean paste
2 pounds powdered sugar sifted.

cream shortening and vanilla till smooth. Add meringue powder and mix till combined. add 2 tablespoons heavy cream and mix again for 15 sec.
Add powdered sugar and add heavy cream by the tablespoonful till smooth and then add cooled melted chocolate and mix thoroughly. Add more heavy cream if needed.

This icing can be left out on a cake and I have never had any problems with it.
This does crust and has a fudgey chocolate taste. You could use any type chocolate to make this...so play with it and make it your own.
Does ITO sell Vanilla Bean Paste??

unfortunately, no. HINT HINT!!!!!!
I have asked about it though. So until then I buy it from local store or online from
VANILLA BEAN PASTE
but that's also 320z. at a time. If I buy locally I get 4oz. for 9.95! Much cheaper this way for me and it keeps well.
