When fixing the hard candy I use a large cookie sheet to pour my candy in, this is enough for 2 batches that is why I use a large cookie sheet.

4 cups sugar
1 1/3 cups light corn syrup
1 1/2 cups water
flavoring oil

I always make a double batch of candy when fixing this because one is bring to a boil, I never use a candy thermometer ( cant never keep one for some reason )
once it starts to boil I add my color I am going to use it spreads throughout the sugar you dont have to stir it
How I tell it is ready to take off stove I get a cup of cold water and drop some of the candy in the water when it crackles and it becomes hard as soon as it hits the water. I know it is ready. I take it off the stove and start to add my oil, stir and pour into the pan.

Its not hard at all to fix.

yes you add your flavoring sorry about that I guess I was thinking of Cinnamon Oils that is what I mainly fix since that is my biggest request to make. Where I make a big batch I always use 2 of the 1 dram bottles,each time each bottle equals 1 teaspoon.

Do you put a silpat or something down in your pan before you pour in your melted hot candy mix?

The pan I use is non stick, nothing expensive. You could rub a little oil lightly over the bottom of the pan. It shouldnt hurt using the pam you have just use it sparely and once the candy is ready to break up sprinkle lightly with powder sugar it helps from the pieces sticking together.
