How far in advance should I bake
Hello everyone. I was curious to know how far in advance should I bake the cakes I need for my party on the 17th. I usually bake them the day before in the morning when i'm just using buttercream. But this year I decided to try my hand at fondant and I am unsure of when to bake them. Should I bake them earlier in the week and freeze them. Please help

I baked my cakes I needed for today on tuesday, wed and thursday. I let them come to almost not hot then flip out of pans into seal-n-wrap paper then right into freezer till I need them. Let thaw and boom, instant moist and yummy cakes ready to decorate, fill or torte.

If it's anything like how I do my cakes, I try to give myself about 2 days before the cake is due. For example, I'm doing a cake this Sunday. I baked the cake Friday afternoon and let it cool and Friday night I leveled and torted it and filled and crumb coated it. Then on Saturday, I go through and finish it up. I always like to give myself pleanty of time so I don't have to rush.

I baked some on a Wednesday night for a Saturday & didn't put them in the freezer and my friend said they were so fresh & moist. I remember some people on Cake Central saying that they always freeze their's & think they are moister. I've always found them to be moist. Although I use mixes, "tubbed" frosting, & always buy my fillings in a tub, jar or can.
Alright, alright, I'm not doing this for a living, have no intention of doing this for a living, & my friends and family are happy with them. Ok, ok, I'm ready for the jabs!!

My New Year's resolution again was not to buy anymore cake decorating supplies and use everything I've bought already. There's always next year...

Depending on how big the cake I'm making is and if I'm working my day time job, my schedule it to buy supplies 3 days before the cake is due, bake the cakes and make buttercream 2 days before the cake is due, and then decorate the day/night before the cake is due. I hate decorating right up to the last minute in case something goes wrong. I like to be able to sleep the night before knowing the cake is ready.

While this is the plan I choose to go with as well, I usually end up still working right up until the last minute.

When I bake at home, I prefer to do it in advance... In Wednesday, if I will need it for Sunday. After is out of the oven, but still warm, I will set in freezer. The heat of the cake will transform into moistness when I take it out to be put together and decorate it on Saturday. Finish the work on that day, and have it ready for the party without any stress on Sunday.

I have just discovered freezing cakes! I have heard people say that it makes them more moist but, I didn't buy it. 
Sure enough a couple weeks ago I had no choice but to make a head of time and freeze. I double wrapped, put in ziplocs and took them out the day before due. I was skeptical, but whaddya know those more experienced decorators actually know what they are talking about...they were more moist! .gif)
