Default Dulce De Leche Filling?

If i used DDL to fill cupcakes, will it stay soft or harden eventually? I'd hate for people to bite into them and think they hit rock or something. Also should I refrigerate or it's okay to leave it out?

Well I make my own out of boiled condensed milk and it stays gooey when you use it, I dont refridge it at all.

how long do you stir before it caramelizes and have you tried making more than one can at the same time?

actually I put 3 cans in a huge pot on stove unopened, boil them for 2 hours keeping the cans at least 3/4 of way covered in water. Let cool and then open, viola! Caramel that is creamy and pliable.

I never have, but I know I made it on stove top once but it seems like I stirred it forever and ever.....

I do what 2sdae does as well, boil the can. But I make sure the can always stays covered in water and do a low boil for about 2-3 hours. The last cupcakes I filled with DDL and the center stayed creamy.

If you have a Fiesta grocery store nearby (Mexican grocery store) you can buy Coronado brand Leche quemada --The orginal dulce de leche. It is usually in the jam and jelly section. I have been eating this straight from a spoon since I was a kid. It stay soft and creamy. It is worth a trip.
