The recipes I have come from the Diabetic association here and Have been recommended by my nutritionist. She recommends me for her diabetic clients that don't have time to bake.
So here's the first recipe:
Chocolate cake
ingredients:
1 cup of flour
½ cup of whole wheat flour
1/3 cup sugar
3 tbsp cocoa
½ tbsp of baking soda
1 egg
2 egg whites
1/3 cup mashed bananas
2/3 cup milk
¼ cup vegetable oil
1 tbsp lemon juice
1 tsp vanilla
*In a bowl, mix flours, sugar, cocoa and baking soda.
*In another bowl, beat the eggs lightly. Add the banana, milk, oil, lemon juice and vanilla. Mix well. Add the dry ingredients.
* Pour in a greased 8X8 pan.
*Bake at 350 degrees for around 35 minutes.
