Default Oh Amanda!

I'm bringing this up here, since you've seemed to disappear from the cookie forum. You had posted that you have a pumpkin white chocolate cookie recipe. Do you think that you could share that recipe please?????

Sorry, I forgot all about it!

Pumpkin White Chocolate Drops
From "Best Loved Cookies" by Publications International, Ltd.

2 cups butter, softened
2 cups sugar
1 (16 oz) can solid pack pumpkin
2 eggs
4 cups all purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon baking powder
1/2 teaspoon baking soda
1 (12 oz) bag vanilla baking chips

Now here is the only place I deviate from the recipe. It calls for 1/4 cup packed brown sugar and 1 container of.....*gasp*....canned cream cheese frosting! Just make your own cream cheese frosting!

Sift together flour, pumpkin pie spice, baking powder, and baking soda and set aside
Cream together butter and sugar until light and fluffy
Add the pumpkin and eggs, beat until smooth
Add dry ingredients and beat just until well blended
Stir in chips
Drop dough by rounded teaspoonfuls about 2" apart
Bake for 16 min (at 375) or until set and the bottoms are brown
Combine frosting and brown sugar in a small bowl
Spread on warm cookies....yummmmmmmmmm

Sorry.....
I hope you like it. I would suck to be waiting and waiting and then hate it.

I'm sure it will be delicious. I'm hoping to make some this weekend. Can you tell me if these come out flat like regular chocolate chip cookies, or do they come out more fluffy?

Thanks!

They come out looking like ugly orange-ish rocks. They are puffy and lumpy (due to the chips) and misshapen. They really are some of the ugliest cookies I make. Sounds appealing, huh? But despite how they look, they are very light, cakey and delicious. Hope that helps. Good luck!

My friend made something like these when I visited her around halloween, and I had never heard of a pumpkin cookie before---they were SO good! Thanks for sharing the recipe!
