on a less excited note...I tried the towels once also, and was not impressed with the results. I think maybe it was because my towels didn't stay wet enough. I do love the bake even strips though...as you can tell from my previous post!

to those who use the towels, how thick do you make them? and how long do you soak them in the water?

one trick i can give is put them on your pans before filling it. Save yourself some frustration trying to pin them close LOL

I finally sat down one day and made strip lengths for all the pans I use the most often. It got to be such a pain fitting them together to get just the right length and this makes it much easier!

Someday someone is going to make pans with insulated sides like they do the cookie sheets. I figure that will happen the day after I get my last old Wilton pan replaced!

I just made cakes this morning, and since I don't have ALL my nice pans yet I still have a couple Wilton POS.
Anyway, I had to use 1 Fat Daddios and 1 Wilton. I used the strip on the Wilton, and none on the FD, and they look the exact same. Just more incentive to buy nicer pans. What a shame.

I was watching Giada de laurentis the other day and she made an almond cake and her cake came out so level and so perfect i was so jealous. my cakes usually come out domed and then they sink afterwards. i know it means i underbaked but the top is cracking and sometimes has a crust already and when i check it says it's done.

that's why i find cakes so intimidating.
