Default ice cream cake question

hi, it is getting warmer out, and i have recently recieved three orders for ice cream cakes. i have a small out-of-my-kitchen business. so one of the little girls wants a cookie on the bottom, but in the past, when i have done this, the cookie is hard as a rock, and the people can't cut it! any advice?

I dont see how you can avoid it....the ice cream has to be kept cold so maybe someone else can help further, but welcome to our wonderful boards!

do you make the cookie yourself? Maybe you could use a softer cookie recipe maybe....

i do, i use the recipe from the chocolate chip bag, and they're always soft, i guess just not when frozen. would you have a good recipe for soft cookies to recommend?

I use a general cookie recipe but I add 1/3 cup shortening to keep it soft and last fresher longer. I sub some of the butter for butter flavored crisco...get the taste of butter but get the benefits of shortening.
