What would you do
My mum moved a couple of weeks ago with my sister 2 and brother 10 now its aprils birthday on the 26th and coreys on the 30th im going 2 visit them for a week to catch both their birthdays BUT i would do there cakes on the 25th ready 2 go in the morning i want coreys cake to be delicious as well as look good but that means im baking it 5day before eating will madiera last this time any suggestions on an alternative long life cake also any warnings on the icing as it might have raw egg in will it go bad ARGH

Would you be able to bake your brother's the cake at your mom's new house? He might enjoy helping his big sister make a beautiful creation. And as a bonus, you'd get some special time just with him, too. .gif)

I would bake them and wrap them tightly and freeze until the day i go, then frost and decorate also the day you leave! Works for me! .gif)

I vote for bake, freeze, then decorate at yours moms. My cakes are extra super moist after they have been frozen!

DITTO!
I freeze mine straight out of the pan while still very warm. I wrap them as soon as I am able to safely handle them with out crumbling them, in press and seal wrap twice and put in the same pans in freezer at least over night. Moistens the cake and if you have any stiffness to corners or edges it just smooths them and they are soft as the rest of the cake.

I have even frozen italian butter cream It will hold in the freezer for at least a month you just need to let it thaw out in the fridge for a bit then at room temp and rewhip to get the creamines going.
Since italian meringgue butter cream is made with boiled sugar, that pasteurizes the egges and therefore stabilazes it. Sugar also is a natural preservative that is why royal icing is still edible after a long time. If I am going on a long trip and traveling with buttercream i store it in a cooler with Blue Ice or some kind of ice pak for lunches.
If you make your filling (preserves) that will also last a good amount of time in the fridge.
As mentioned before, that way you can take your "pieces" and asseble you edible art together with the family! A treat indeed for the young ones!

I agree, decorating with the brother and sister sounds fun and a good way to involve them into their indiviual cakes too. They can say she what sis and I made?! .gif)
