Pans sizes for cakes
Okay first wedding cake here, my first time doing a tiered wedding cake does anyone have an idea of what size pans I should purchase? all I have are two 6 inch pans. What is the normal size pans used for a wedding tiered cake? she told me it was for between 100-200 people. She said she will get back to me on the amount. but I was trying to get an idea on the size pans. I need to buy some. thanks for the help.

Re: Pans sizes for cakes
I have in rounds... 16,14,12,10,9,8,7,6,5,3,2. In Squares... 16,14,12,10,9,8,7,6,5,4
The ones I use most are the 12,10,8,6,4
Really depends on the size of the wedding if you are looking at the 200 guest count you will have to use either the 14 or 16 inch base to have enough.
Here are the size/servings charts that I go on...
Squares
5/14
6/18
7/24
8/32
9/40
10/50
12/72
14/98
16/128
Rounds
5/8
6/10
7/12
8/24
9/32
10/40
12/60
14/70
16/112
And remember.... you don't incluce the top in the count of guests. Hope this helps!

Re: Pans sizes for cakes
Thank you Jeri, I have always shyed away from making wedding cakes because I never could figure out the serving sizes. I am always afraid I will mess up and not make enough. I could never understand how to charge a person. Thanks for the info. That helped me a lot.

Re: Pans sizes for cakes
I charge per serving. If you need the cake for 100 be sure that amount of servings are included in the cake not including the top tier. If you are charging $3 per serving that works out to $300 for that size of cake.
When I first started doing wedding cakes I barely covered the cost of supplies. Then it seemed like I was doing tons of cakes and couldn't even buy new toys because I couldn't afford to. Then I got smart... charge more for the cakes so I can buy more toys!!! It seems like everything I make is put right back into supplies but I have a great stash of great cake toys!!! And it seems like every time I turn around someone says can you do this... and I think for a minute... I have that toy!!! Yes I can. So be sure you charge enough to keep going... it's more fun that way!

Re: Pans sizes for cakes
I only use the 2" pans. I have a few Fat Daddio's pans but I prefer the magic line pans. I have such good luck with them and have had them for several years.

Thank you Jeri for all of your help...I just looked at your pictures...OMG! they are beautiful, you do excellent work...I hope mine turns out as good as yours. What is the difference with Magic line and FD (never mind I did a search and found a thread discribing the difference)

Re: Pans sizes for cakes
Thank you so much for the compliments. I only do cakes in the summer as my summer job!!! I am a secreatry at the school and once I go back to work... it is really hard to work full time and cakes full time. I will do one or two a month but no more than that.
Anyway... the difference between pans... I do not know but I know I have used my magic line pans for several years and I just love the way they bake. I have never had any problems with them at all. I am adjusting to the Fat Daddio's pans that I purchased and will figure them out. I just have to remember which pan I am using and how to adjust the temp etc accordingly. This last time I used the FD pans I had fine results. Just hard to teach an old dog new tricks!!!

Re: Pans sizes for cakes
LOL....I will purchase the magic line first and see how that goes.....not too much money to play with right now. I do have wilton pans but I really do not like them, really would like new pans . Do you use the even bake strips on the magic line pans?
