Carrot Cake recipe

I was wondering if anyone knows of a carrot cake (or cupcake) recipe that requires a lot of carrot juice. I've bought a lot of carrot juice from Costco and we just "carrotjuiced" ourselves, thought maybe i could use toward cakes.
