Default Baking Temperatures

Is it necessary to lower the oven temperature from 350 to 325 when baking larger cakes? If so, can someone explain why to me. Thanks so much.

it helps the cake to bake more evenly. When you bake a big cake at 350, the sides of the cake becomes hard and the middle isn't done.... so that's why I always lower my temp. even for smaller cakes I do it. like this they don't rise too much in the middle and bake a little more flat

I bake at 325 for my small cakes too! Much better results!

I bake all my cakes at 325 and use the cake strips or homemade towels on my sides of pan to help ensure even baking and no humps in the middle.
Makes for a more moist cake too as you dont have hard edges or crusty tops to cut off too.

Yep, a little more time but I start keeping an eye on it at the regular baking time so that it doesn't overbake.

FYI - Lowering the temp is also recommended if you're using Fat Daddio's pans. Hmmm, with the price of everything (gas, electricity, etc.) going up, I wonder how much savings you'd get by baking at 325 as opposed to 350? I'm sure not much if you don't bake that many cakes, but if you're a full fledged bakery with an oven going all the time, wonder how much money that saves?

I only use time as a reference, I watch them closely and check for them to be done and pulling away from the sides of pans. Never steered me wrong yet.
I bet you wouldnt increase or decrease you r bills with the lower temps due to your baking time is elongated so it prolly averages out about even.
