I wish I could sit down with her and show her, but she lives in Georgia--14 hours away!! I wont even be seeing her until the day I make it!! She told me that she really doesn't care what I make her, to surprise her. I just want it to be perfect, ya know!! She doesn't know anything at all about cakes--she has never seen Ace of Cakes or anything of the sort. All she's ever seen is round white buttercream with white buttercream roses. So I think anything will surprise her!

As for the damask--the piping sounds like a piece of cake, I just wonder what they're using--is it chocolate or royal icing? And how would you make royal icing brown?

I think that damask is a stencil, I have seen them use cutters too to get this effect.
Royal can be colored with powder colors pretty easy. I add it in the dry mix and if I need darker then add a tinge of black powdered food coloring.

Neat, thanks 2sdae!! I was just thinking that one was piping bc of the description of how they did it under the picture!! It's really pretty. Too many cake design choices!

If you click on the smaller pics under that damask cake you can get a very close view of it on cake up close.

That one definately looks like the Steven Benison cutters. It is a really nice look. His cutters are expensive but so versitle and very detailed. Much easier than the stencil! I haven't worked much with stencils though.
