This is actually a recipe for pastry cream filling (kinda like a custard) but it can be modified to make it chocolate or mocha. My Wilton instructor gave this to me. It's very easy, and I use it all the time.
3 Tbls. flour
6 Tbls. sugar
1/8 tsp. salt
1 cup half and half
4 egg yolks
1 tsp. vanilla extract
Mix the flour salt and sugar in a saucepan and blend in a little of the cream over medium heat and stir constantly.
Add the rest of the cream and continue stirring until it reaches the consistency of a medium cream sauce.
Mix a little of the sauce into the egg yolks, then add the eggs to the saucepan.
Mix for a few minutes on low hear until thickened.
Remove from heat and add vanilla.
To prevent a skin from forming, brush with melted butter. Stir before using.
For Mocha: reduce the amount of cream by 2 Tbls. and substitute 2 Tbls. of extra strong fresh coffee.
For
Chocolate : Use recipe as is and after removing from heat add 2 ounces of melted unsweetened chocolate. (*I use semisweet....it tastes like brownie batter
