There are two different ways you can go about it, one is to hire someone, but be sure you see some of their prior work to make sure their tastes and yours match.
They will usually do anywhere from 5-10 drafts of different looks and feels to see what direction you would like (even if you don't know yet.

The other way is to just sit down one night and start doodling, see different things that come up. That's kind of how we came up with our logo. We wanted to have a retro symbol, yes also modern feel and look. We thought our cake lady was an excellent representation. When we came to it, we said "Yeah, that's it".
