I freeze mine at least over night to lock in the moisture. I can get all my corners on square cakes soft and no hard edges which makes it easier for me to get crisp edges and sharp fondant edges with out tearing it.

I wonder if cheesecakes stay more moist if frozen like my regular cakes. Any one have any idea about them?
