Default Fillings for chocolates?

I have some powdered fondant that you mix with butter or cream and different flavours for chocolate fillings. Has anyone used this, or does anyone have any other good recipes for chocolate centers?

I have the toasted coconut dough from here (oh my goodness - you can eat it right out of the tub) but I was hoping for some other ideas, too.

I'm wanting to make boxes of handmade chocolates for Christmas gifts this year, to go along with the cookie boxes I always make. See, if I give most of it away, then I won't eat it myself!
