Default molded chocolate?

I've only used the chocolate molds one time and I used the Wilton candy disc things to fill it with. I'm wondering what other kinds of candy/chocolate you can use to fill molds? Anything I can buy locally, I don't have much time to get these made in...I'm totally new to candy so I have no clue what works and what doesn't. I just really want a good chocolate taste to them, also does anyone have any tips on a good center filling? ANY help is appreciated! Thank you!

The candy melts work really well. I prefer Ghiradelli melting bars, but can only find them at Sam's 40 minutes away. I like to make chocolate ganache for the middles.

Is it specifically called melting bars or is it just the chocolate bars that you find in the cooking aisle? I'm guessing you just melt down the chocolate like you do the candy melts right? Ghiradelli is soo yummy! Chocolate ganache sounds really good, do you know of a good recipe? Sorry if I'm asking too much, I'm just trying to find some good ideas, I want to do little chocolates as thank yous to some girls next weekend and I want them to be good Again, thank you so much!

It is called Ghiradelli Candy Making and Dipping Bar. It is 2.5lb. I think it may come in white also, just have not seen it to purchase anywhere around here. Look on Food network for Ina Gartens recipe for chocolate truffles. It calls for grand marnier in the recipe. That is what I use for filling. I just make sure that it is warm enough to fill a bag so that I can pipe it in. It is so yummy!!!! All you really need is a great movie and a spoon!!!!!!

Thank you so much, that sounds good! I'll check at our walmart for the chocolate today, just in case, if not I'll get to sam's some time this week I'm sure! Can't wait to try it out!

likitiki,

Does your Sams sell the Ghiradelli all year long? Ours only sales the bars starting in November. I stock up for the year. I just make cake bites so am down to three boxes. Where are you located? I should check and see if I can buy it from Sams online. Going there now.

Can a person add liquor or flavorings to chocolate melts or chocolate? I noticed that you mentions something about adding it to truffles. I would like to add some liquor to chocolate melts to use with my cake bites.

I do not know about adding the liquor to the chocolate melts. Do a test batch first, to see if they still set up. A flavored oil might work better. Sam's here still had the bars in Feb., I do not know if they still have them. We have not been since the end of Feb. Maybe you can order from Ghiradelli? I would contact them to find out, worth a shot!
