yeah, I just dont use it enough to warrant the 5# tubs. But I would like to get some smaller ones, I thought maybe using some smaller versions of these may work out better for me....do the icing fruits go bad? Never thought of it.

I got mine through National Flavors - Flavoring Materials for Baking, Candy, Ice Cream : Natural Extracts and Concentrates. As far as I know, they should be good for quite awhile and don't require refrigeration. The only ones I got thus far are the strawberry and caramel and they were both $12 for 5# tubs. That's a pretty good deal compared to the little 10oz jars that are $4-$5.

I wasn't a big believer in compounds and dry flavorings but they make a world of difference in your cakes. I love punching up the lemon or the chocolate flavor in my cakes. Everyone really likes the intense chocolate flavor, it really does put the cake over the top. I think this is one of the best kept secrets in the industry.

When you use them in your cakes, are they cakes from scratch or doctored cake mixes? Also how much do you use? And have you used the compounds in your frostings?

Yes. They are very friendly to work with. And their prices for the extracts and flavorings are very reasonable.
