Default Whimsical Bake House Buttercream

Whimsical Bake House Buttercream

In mixer bowl, stir together:

6 cups powdered sugar
1/8 tsp salt
1 tsp vanilla

Using whip attachment, add and whip on low speed:

1 cup boiling water (3/4 cup on hot days)

Whip until smooth and is cool.

Add and whip until smooth again:

2 3/4 cup hi-ratio shortening or regular vegetable shortening
6oz (1 1/2 sticks) butter; slightly chilled and cut into 1" pieces

Turn up mixer to medium-high. Whip until double in volume and is light and fluffy. About 10-20 minutes. recipe will almost fill a 5qt mixer bowl when done.

Makes 9 1/2 cups

For chocolate buttercream exchange 1 cup of powdered sugar for powdered cocoa.



I like using this as a filling because it has a nice cream light texture to it (almost like the filling you would get in a Twinkie or Ho-Ho). It is either good by itself or sometimes I'll mix in some icing fruits or peanut butter into it. People really seem to like it.

You guys need to be very careful about making this icing. It tastes extremely good!!! Just yesterday I ate two spoonfuls of it by itself. I am usually completely icked out about eating shortening-based icing but this stuff is HEAVENLY!!

I just love it....which makes it dangerous to have leftovers of it in the house.

By itself, it doesn't really have much of a flavor to it. But when paired up with cake, it works very nicely.

I love the way this tastes by itself. I think its flavor kind of gets lost on cake. I add various flavors and extracts to it to give it more of a punch.

OK I just have to brag. I bought the Whimsical Bakehouse cookbook at a sample sale at work for $1.00!!!! I have already read it cover to cover and plan on trying out many of their recipes and ideas. Oh, also yesterday I was at our clearance center and I found 4 bottles of oyster pearl dragess for $3.24 ea and 1 bottles of silver dragees for $3.49. They were an additional 40% off and I received my employee discount of 25% on top of that!!!. ( I work for a large retail store). It was a great bargain weekend.
