Default Fruit Fillings

Recipe from Jan at Cake Central

If you go to the canning section of your department store... Walmart carries a wide variety of canning supplies... you will find a package of Freezer Jam Pectin that Ball puts out.

I have modified the directions just a bit due to the fact that I want my strawberry jam to taste as close to "fresh strawberries" as possible and not as sugary as some jams are. I put 4 cups of berries to 1 1/2 cups sugar... plus the pectin. The package will tell you how to actually prepare it, but there is no cooking of the strawberries... that's why I like it so much. Also, the package tells you to crush the berries... I don't.. I just simply slice the berries and leave the slices as "un crushed" as possible. Prepare the pectin, mix it with the berries... let that mixture sit for a few minutes then put the jam in the container... and place in the freezer. Simple... If I can do it... ANYBODY can do it! HA

One thing I will say is that I save all my containers from sour cream... cottage cheese... chip dip.... clean them real well, and use them for my jam. I don't go purchasing "special" freezer jam containers to put the jam in. It's senseless. I try to be as resourceful as possible.

Just a note:... I make this same freezer jam out of raspberries.... peaches... blueberries.... blackberries.... and keep it on hand in case a bride wants any other type of fruit filling... I'd rather use this type than to buy that fake stuff that's so filled with preservatives...

I do have 1 question...Can you use bananas,pineapples or apples??? and if so, should they be crushed? and use fruit saver to keep their color or lemon juice???

I will definitely try this around the first of August - I have wild blackberry bushes growing just behind the backyard fence that get cursed at most of the year, until the blackberries start ripening and I start making cobbler and pie and all kinds of desserts. This will be a great additional to my blackberry recipes! Thanks!
