Lemon Cookies
The Ingredients
1 cup flour
1/4 cup sifted powdered sugar
2 tsp lemon zest
1 stick unsalted butter, softened
1/4 tsp vanilla extract
2-3 drops lemon oil
1 cup (more) sifted powdered sugar
The Method
Lower oven rack to 2/3 down and pre-heat to 350 degrees F.
Mix flour, sugar, and zest in medium bowl with spoon (no need to mess up mixer). Add vanilla, lemon oil and softened butter and stir until dough is consistent.
Roll dough into small balls and flatten slightly onto cookie sheets lined with parchment paper.
Bake 14 minutes or until bottoms are golden brown. Cool completely on wire rack.
Once cookies are completely cool, gently place them in a gallon zip-lock bag with about 1 cup of sifted powdered sugar and move them around till they are covered. Store in this bag or any other air-tight container.
