White Chocolate Chip Lemon Cookies
1 cup margarine, softened
2/3 cup packed brown sugar
1/2 cup sugar
1 egg
2 tsp lemon extract
2 1/4 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
1 package (12 oz) white chocolate chips
Preheat oven to 350, line cookie sheets with parchment paper.
Beat margarine and sugars with mixer until creamy. Add egg and lemon extract and beat until fluffy. Combine dry ingredients in a separate bowl. Add gradually to butter mixture and beat well. Stir in chocolate chips.
Drop by tbsp onto prepared cookie sheets. Bake 8 to 10 minutes or until lightly brown. Cool on sheet for 2 minutes, transfer to wire racks to cool.
Makes about 3 dozen cookies
Variation: Use banana extract and chocolate chips for banana chocolate.
