Chocolate krinkle cookies
Preheat oven to 350 degrees and grease two cookie sheets
makes 6 dozen cookies
In a large bowl of an electric mixer at medium speed, cream:
2 cups granulated sugar
3/4 cup vegetable oil
Add and mix at low speed until well combined:
3/4 cup cocoa powder
Add and beat until well combined:
4 large eggs
2 tsp vanilla extract
On a piece of parchment paper, sift together
2 1/3 cups all purpose flour,
2 tsp baking powder
1/2 tsp salt
Add to the sugar mixture and mix at low speed until combined.
Cover the soft dough with plastic wrap and chill for 6 hours or overnight.
Set aside
1 cup sifted powdered sugar
Roll the dough into 1 inch balls. Roll each ball in powdered sugar and arrange them 1 inch apart on the cookie sheets. Bake for 12 to 14 minutes, or until the cookies have puffed up slightly. Let cookies cool in he pans for 5 minutes, then transfer cookies to a wire rack to cool completely.
