Ricotta Cookies
Dough
2 cups flour
1 cup butter softened
15 oz ricotta cheese
2 tsp vanilla
2 eggs
4 cups flour
2 TBSP baking powder
1 tsp salt
Frosting
Powdered sugar

Preheat oven to 350. In large bowl of mixer at low speed beat the sugar and butter until well blended, increase speed to high beat until light and fluffy, about five minutes.
At medium speed beat in ricotta, vanilla and eggs until well combined. Reduce speed to low and add flour, baking powder and salt; beat until dough forms. Drop dough by level tablespoon, about two inches apart; onto large cookie sheet. Bake about 15 minutes or until golden brown. When cooled frost and place a candied cherry piece on top of each cookie.
