Default Italian Lemon Drops

Dough
4 eggs
3 cups flour
3 tsp baking soda
1 cup sugar
2 tsp lemon juice
2 tsp lemon extract
1 stick of blue bonnet

Frosting

Powdered sugar
milk
blue bonnet
lemon zest
lemon extract


Preheat the oven to 350 degrees. Cream the blue bonnet and sugar. Add eggs, lemon, lemon extract, flour and baking soda. Beat until smooth. Drop dough by teaspoon onto cookie sheet and bake for 15 minutes or until golden brown.

Make frosting and dip warm cookies in frosting. You can top with lemon zest if you like.

these are not a crispy cook. They retain their shape when dropped onto the cookie sheet. They have a cake like texture. Moist. These are good to freeze once you have baked them, just don't frost them until you are ready to eat them. These are great during the summer or for a Christmas basket. I love the lemon flavor.

mmmm Can you send me some? I copies the recipe & will have to try them one of these days. I love lemon too. Devils food cake with chocolate icing and lemon filling is my absolute favorite cake!!!!!
