These cookies are served at weddings and other special occasions. I make these by the hundreds since they are eaten so fast. They sells these at the Farmers market for a dollar a piece. I hope you enjoy this recipe and that you make it often. This is a good recipe for the kids to get involved.
8 Eggs
5 TBSP sugar
2 tsp baking powder
1/4 tsp salt
1 tsp vanilla
3 TBSP melted butter or blue bonnet
4 cups flour
Oil for frying
Powdered Sugar
Almond Extract
In a large bowl add all ingredients, except the flour. Beat with a wire whisk. Add flour. Knead well, adding additional flour, if needed, until dough is medium soft, but not sticky. Divide dough into small balls and knead again. Cover and let rest for 15 minutes. working with one ball at a time, roll until about thickness of pie crust. Cut into 2 inch wide strips about 6 inches long. Make a small slit in the middle and pull one end through the slit. Fry in hot oil until golden brown.
Make a glaze out of the powdered sugar, almond extract and water. Divide the glaze and color different colors. Drizzle over the Guantis. Let glaze dry.
