Peppermint Patties
These are one of my favorite candy recipes!
Peppermint Patties
1 package (8 ounces) cream cheese, softened
1 teaspoon peppermint extract
9 cups confectioners' sugar
1-1/2 cups dark or milk chocolate chips
3 tablespoons shortening
Combine cream cheese and extract in a large bowl and beat until smooth.
Add confectioners' sugar a little at a time,beating well.
Shape into 1-in. balls Place on waxed paper-lined baking sheets.
Flatten into patties. Cover and refrigerate for about 1 hour or until chilled.
In a sauce pan on low heat or in a microwave, melt chips and shortening; stir until smooth.
Cool slightly. Dip patties in melted chocolate; place on waxed paper until firm.
Store in the refrigerator.Makes about 4 dozen.
