I thought I'd start the forum with one of my favorite recipes: Caramel!!
Ingredients:
2 cups white granulated sugar
1 cup packed brown sugar (I like light brown)
1 cup corn syrup
1 cup evaporated milk
1.25 teaspoon vanilla extract
1 pint heavy whipping cream
1 cup butter
Grease a 12x15 inch pan. Set aside. In a large, wide, deep pot, combine granulated sugar, brown sugar, corn syrup, evaporated milk, whipping cream, and butter. Using a candy thermometer to reach 250 degrees, Cook over medium-high heat, stirring constantly. When the candy reaches 250 degrees, remove from heat. Stir in vanilla. Transfer the mixture to the prepared pan and let the candy cool completely. When cooled, cut the caramels into small squares and wrap them in wax paper for storage.
***From experience, do not be mindless and touch the caramel. If you get some on your hand and its burning, don't try and stick that in your mouth to fix the problem. Trust me, it just goes downhill from there. Cold water is your friend!
***Also, you may be there stirring for at least an hour. But it's worth it!
