Brown Sugar Banana Bread
This is a fantastic Banana Bread recipe. I won the blue ribbon at the fair with this a few years back. It is soooo yummy
Brown Sugar Banana Bread
1 cup packed dark BROWN sugar
1/2 cup real butter
2 eggs
3-4 ripe bananas
2 cups flour
3 tsp bkng powder
1/2 tsp salt
1/2 tsp soda
1 cup chopped nuts (I use fresh pecans)
Cream together the sugar and butter. Add Eggs one at a time beating well after each
Add bananas one at a time. (I just add the bananas to the mix as the kitchen aid is mixing. If your bananas are not ripe, be sure to mash them first) Add baking powder, salt & soda. Mix flour in one cup at a time. Add the nuts.
I spray my loaf pan with Pam. It makes a medium and a small loaf or one large loaf depending on which size of pan you choose to use.
Bake 350 for 60 minutes. Remove from oven let sit for 10 minutes. Remove from pan onto foil and wrap tightly. You can eat it warm and it is really good. But we like it best after it is completly cooled. You taste the bananas more when it is cool.
I made 2 loaves yesterday took one to our son & his fiance' while we were making wedding plans. I came home and thought I'd love to have a piece of that banana bread only to find that my hubby ate the WHOLE LOAF!!! Needless to say he had to spend extra time on the eliptical today!
