Default Banana-bread muffins (diabetic exchange)

Banana-bread muffin

1cup white flour
1cup of wheat flour
2 teaspoon baking powder
1 teaspoon baking soda
1/4 cup oil
1/3cup sugar
1 teaspoon vanilla
1 teaspoon butter flavoring
1 egg
2 egg whites
1 cup banana pureed
1/2 cup milk

*Mix flours, baking powder and baking soda. reserve
*In another bowl, mix oil and sugar. Add flavorings.
*Beat egg and egg whites slightly. Add to the other mixture. Add the bananas and milk. Mix that mixture to the dry ingredients. Mix well.
*put the batter in muffin pan, lined with muffin paper cups.
* Bake in 350 degrees preheated oven, for 20 to 25 minutes.

# you can substitute the bananas for any kind of fruits, pureed.

Makes 14 muffins
1 portion= carbs: 21.8g proteins: 3.1g fat:4.5g fibers: 1.6g Calories: 136.7
Food chart exchange: 1 ½ cereals
Quebec Diabetes exchange: carb: 1½ fat: 1
sugar portion: 1½

made these with rice flour and wheat flour, subbed oil for olive oil, splenda blend for baking and used skim milk...so good and less fat and calories even still!!!!!
They are wonderful warm especially!

My nutritionist doesn't like it when I bake with Splenda. She prefers diabetics to lose the taste of sugar... Since Splenda is really sweet, the diabetics still crave sugar. But using sugar in small amount, it's less sweet and they get used to that instead.

Rice flour, it's expensive no? In the gluten free aisle at my grocery store they have it, but darn, it's expensive!
I use 1% milk here, still low fat
Muffins are always good when just right out of the oven, but it goes right on my hips! You can't stop at just one!

I use the splenda blend so it it is a mix of real sugar and splenda so it's a little better but not straight one or the other, it's my compromise for my family. I'd use all splenda and they want all sugar.
I have a bunch of rice flour I got from the Chinese/Viennese store...so I got a big bag.
Glad I did now, as it has gone up a lot...so has every thing else though.

I am diabetic and use sugar in baking... just watch how much I consume! We have splenda here for tea, coffee etc but I rarely use it. It is really sweet. You have to cut down on how much you use. These muffins sound really good.

I have an entire cookbook for dessert for diabetics. Every now and then I post one recipe here. That cookbook was recommended by nutritionist for diabetic clients. The cookbook is in French so I need to translate each recipe before posting it. that's why I prefer at least try the recipe first to make sure it's good!

I have a lot of diabetic cookbooks.... don't use them much because when I bake, it's generally not for me. The diabetic diet is a great one to lose weight on. Very balanced, nutrition based not calorie based. I slip a lot but have been on it long enough that I know what I should and should not have... and checking my glucose levels keeps me in check. It's amazing what shoots you through the roof.... The hardest thing for me to stay away from is bagels. I LOVE them and we have a really great bagel shop here in town... however... if you want to shoot your glucose level through the roof... bagels will do it! Too many carbs!

Bagels.... That's one good thing to know. I have friends and family member that are diabetic, so that's one thing I won't offer them when they come over...

As for desserts, my clients are happy to know there's one place that they can order something special for them.... Like on July 5th I had a 150 people cake for a 50th anniversary. My cousin ordered it, and her sil is diabetic and couldn't that cake. I had offered her to make her a small portion of dessert just for her, free of charge. Well she chose the lemon raspberry cake with raspberry sauce. I even told her the exchange for the dessert. She loved it so much, she still talks about it. She told me now she knows where to find great desserts that even her can eat!

I LOVE sweets so I really have had to try to just not get started. It's really hard being around it all the time baking! I sneek a taste here and there and keep an eye on my glucose. Every now and then I blow it... and pay for it! It's nice that you can offer them an alternative! I just know my own limits... if I get started I am in trouble so I try to just not get it going!

That sounds like me...except it fatty disease I suffer from...good ol gluttony.....no shots or pills for that one! So dont get me started!
