Default mini cheesecakes

Hi all.I hope this is in the right place. I recently purchased a mini cheesecake pan from Williams Sonoma. It has twelve sections with flat inserts in the bottom for removing the cheesecakes. I would love a recipe for this pan. Any help would be greatly appreciated.

Your right Jeri. It did have a recipe but it wasn't that great flavor wise. I was hoping to get a few additional ideas. I don't really know how to adjust or change a recipe to make it more flavorful.

MINI-CHEESECAKES


12-18 vanilla wafers (depending on muffin tin's size)
2 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs

Line muffin tin with foil liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla, and sugar on medium speed until well blended. Add eggs. Mix well. Pour over wafers, filling full. Bake at 325 degrees for 25 minutes. Remove from pan when cool. Chill. Top with fruit, preserves, nuts, or chocolate. Makes 12-18 mini-cheesecakes.

These are simple to start but very good actually. I crush the vanilla wafers and mix with a tad of butter then mold to bottom of cavities to fit and then load up on the filling. You can add extracts or fruit purees to the batter too. Just be careful to not over load it and end up with too much moisture.<<drain fruit well!

That is wierd... Williams & Sonoma generally has some pretty yummy recipes. Too bad! I have several of their cookbooks and love them. Looks like 2sdae has come to your rescue!

Thanks 2sdae I really appreciate the recipe. I like the idea of pressing the wafers into the bottom of the pan as these pans have small inserts in the bottom for easy push up removal.
Jeri, you are right. Williams Sonoma usually has great recipes so I must have screwed it up. I will give it another try and see what happens.

Actually, I had the recipe that came with a pan that I bought from Williams Sonoma that was not good. It was a vanilla cake that was just way to fragile and really lacked a good taste. I tried the recipe more than once and followed it exactly. Sometimes they are just not good, so do not assume that it is operator error! I have used a recipe like Tuesdays and it always comes out wonderful.

Thanks guys. I am going to try 2sdae's recipe but I have a question. Since the pan has small discs in the bottom and comes with a dowel for pushing the cheesecake up and out do I have to use a paper liner or can I use a graham cracker crumb mixture pressed into the bottom instead of a wafer?
