Old South Pound Cake
The Ingredients
1 lb. unsalted butter
1 lb. sugar
1 lb. all purpose flour
10 eggs (separated)
1/2 teas. salt
1 teas. vanilla and 1 teas. almond or lemon extract.
The Method
Cream butter, add sugar and beat well. In a small bowl, beat egg yolks until light
yellow and add to sugar mixture. In a bowl, combine flour and salt, add to creamed
mixture gradually, beating only until blended. add flavorings and mix. In a small bowl beat egg whites until stiff peaks form. Fold the whites into the cake batter by hand.
Pour into a greased bundt or tube pan. Bake at 300 degrees for 1 1/2 hours. Let rest in pan 15 minutes before transferring to a cake plate.
