I've not had a problem with the Fat Daddios, but I only use the 2". My first instinct say to try turning the oven temp down and bake for longer. You could also try using baking strips and a flower nail.
Hope that helps!!

At what temperature and how long do you bake your cakes? I usually bake my cakes at 325 degrees, which usually means I have to bake them a little longer. And I also use the bake even strips. If your pans are very big, then you'll want to use upside down flower nails to act as a heat conductor while the cake it baking.

The owner of Fat Daddio pans suggested baking temp is 300. There is a thread about it on CC.

I have the fat daddios 4 inch sheet pans and I bake at 325 with flower nails and baking strips. Also double check your oven tamp to be sure it's true and stays that way. Mine sometimes fluxes and can cause the cakes to cook incorrectly.

I believe he was referring to all the pans in general... Not sure, I'll have to see if I can find that thread.
