Pineapple Coconut Cake
Pineapple Supreme cake mix
Filling
150z can crushed pineapple
3 T cornstarch
1/2 cup sugar
1/2 cup shredded coconut
3 egg yolks
Frosting
2 cups sugar
3 egg whites
3 T light corn syrup
1 tsp vanilla
Prepare cake mix as directed on box and pour batter into 2 8 inch rounds and bake according to directions. Cool.
For Filling mix all ingredients in sauce pan and cook on medium until thick and bubbling. Boil one minute. Remove from heat. Beat the 3 egg yolks in small bowl and temper into the rest. Return to heat and return to boil. Cook for one minute. Cool.
Cut and tort cake before making frosting.
For Frosting in double boiler, combine sugar, egg whites, corn syrup, water and vanilla, Place over boiling water, and beat with an electric mixer on high for 7 minutes or until frosting forms peaks when beaters are raised. Remove from heat. Immediately frost cooled cake.
