Chocolate Oatridge Snack Cake
1 cup butter 2 eggs
1/2 cup flour 1/2 cup chopped walnuts
1 1/3 cups oatmeal 1 tsp vanilla
1 cup firmly packed brown sugar 2 cups semi-sweet chocolate chips
Mix butter, flour, oats, brown sugar, eggs, nuts, and vanilla. Beat 3 minutes, until mixture is light and fluffy. Stir in 1 cup chocolate chips. Spread batter into an 8 inch square pan microwave-safe dish; cover with wax paper. Cook on high 4 minutes. Check dish and then continue cooking for 4-5 minutes longer or until top of cake is dry and bottom is an even color. Sprinkle remaining 1 cup chocolate chips over top of warm cake. Let stand 10 minutes, then spread chocolate evenly. Cool cake. serves 8.
