White Buttermilk Cake
I received this recipe from a site that I ordered some cake tools from. I can't remember the name of the site. This is a moist cake and taste great.
3 cups sugar
1 cup butter
4 cups of cake flour
1 tsp baking powder
1 tsp salt
2 cups of buttermilk
1 tsp baking soda
6 egg whites, unbeaten
2 tsp vanilla
Preheat oven to 325 degrees. Sift the flour, baking powder and salt. Set aside.
Cream butter. Add sugar gradually and beat with electric mixer until light and fluffy.
Stir baking soda into buttermilk. Add dry ingredients alternately with buttermilk (in fourths) to butter and sugar mixture. Add egg whites; mix well. Add vanilla.

Pour into three prepared 9 inch pans and bake 25-30 minutes until toothpick comes out nearly clean ( careful not to overbake!) Cool in the pans for 15 minutes and then turn out onto a cooling rack.
